Homemade Comfort: Simple Country Dishes
Nothing beats the cozy comfort of a classic country dish. Today’s recipe is Old-Fashioned Chicken and Dumplings — warm, hearty, and satisfying.
➡ Ingredients:
For the Chicken Stew:
4 boneless, skinless chicken thighs
6 cups chicken broth
2 carrots, sliced
2 celery stalks, diced
1 onion, chopped
1 tsp thyme
1 tsp rosemary
Salt and pepper to taste
For the Dumplings:
2 cups all-purpose flour
1 tbsp baking powder
1 tsp salt
1 cup milk
4 tbsp butter, melted
➡ Instructions:
1. In a large pot, simmer chicken thighs in broth for 20 minutes. Remove, shred, and set aside.
2. Add carrots, celery, onion, thyme, and rosemary to the broth. Simmer for 15 minutes.
3. While vegetables cook, mix dumpling ingredients into a thick batter.
4. Add shredded chicken back to the pot. Drop dumpling dough by spoonfuls into the stew.
5. Cover and simmer for 15 minutes until dumplings are cooked through. Serve hot.
