3-4 lbs beef chuck roast

2 cups beef broth

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp dried rosemary

1 bay leaf




Instructions:


1. Sear the Roast: Season the beef with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side.


2. Prepare the Slow Cooker: Place the onions, carrots, potatoes, and garlic at the bottom of the slow cooker.


3. Combine Ingredients: Place the seared beef on top of the veggies. In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf. Pour over the roast and vegetables.


4. Cook: Cover and cook on Low for 8-10 hours or High for 4-5 hours, until the beef is tender and easily pulls apart.


5. Serve: Remove the bay leaf. Shred the beef with a fork and serve with vegetables and a generous spoonful of sauce.
